2 lb Lobster PEI, steamed, chilled and broken down
4 slices cheese bread
1 clove garlic
0.25 chilies
1 stick butter
2 tbsp dill, parsley
2 tbsp dill, chopped
1 pinch kosher salt
2 cup Cows Creamery cheddar, grated
Put your lobsters to sleep and steam them for 9 minutes. Break them down and save the shells for stock.
Mix up your garlic butter in a mortar and pestle, and crush garlic, chilies with salt. Add butter, and herbs and bring it all together.
Butter your bread aggressively and place it in a medium-heat cast iron pan.
Sprinkle on your cheese wildly and make sure you have some to miss the bread and caramelize in the pan. Top with lobster and flip when cheddar is toasted.
Remove cut in half and serve.
