4 large PEI Russet Potatoes, peeled and sliced thinly
4 cup Vegetable Oil
Salt
2 cup Cheddar Cheese, shredded
4 Slices bacon, minced, cooked
0.5 cup Green onions, sliced thinly
1 cup Sour Cream
Add oil to a high sided skillet and heat to 350°F. Add potatoes in batches and fry until lightly golden. Drain on a paper towel and sprinkle with salt.
Preheat oven to 400F. Line a baking sheet with parchment paper and add potatoes, cheese and bacon. Bake until cheese is melted and bubbling.
Remove and top with green onions. Serve with sour cream.
