lb fresh PEI oysters
tbsp tomato sauce
cup grated parmesan cheese
cup grated mozzarella cheese
cup Italian style seasoned breadcrumbs
slices dry cured pepperoni
tsp dry or fresh parsley (optional)
Preheat oven to 375 degrees.
Shuck oysters and place cup side down on a baking sheet lined with aluminum foil so that the oysters stay upright
Top each oyster with tomato sauce, grated mozzarella, breadcrumbs, pepperoni, parmesan & parsley
Bake oysters in oven 10-15 minutes until cheese and breadcrumbs are golden brown.
