6 lb fresh PEI oysters
6 tbsp tomato sauce
0.5 cup grated parmesan cheese
1 cup grated mozzarella cheese
0.25 cup Italian style seasoned breadcrumbs
6 slices dry cured pepperoni
1 tsp dry or fresh parsley (optional)
Preheat oven to 375 degrees.
Shuck oysters and place cup side down on a baking sheet lined with aluminum foil so that the oysters stay upright
Top each oyster with tomato sauce, grated mozzarella, breadcrumbs, pepperoni, parmesan & parsley
Bake oysters in oven 10-15 minutes until cheese and breadcrumbs are golden brown.
