3 Slices Bacon, cut in half
1 lb Red PEI Potatoes, cooked, sliced into quarters
0.5 cup Red onion, sliced
0.25 cup Maple Syrup
2 tbsp Fresh Chives, sliced
Salt and Pepper, to taste
Cook bacon until crisp. Remove and drain on paper towel.
Add potatoes and red onion and cook until potatoes are crisp and onions are softened.
Add maple syrup and cook for another 5 minutes.
Top with chives and season to taste.
