1 lb cooked PEI mussels, shelled
1 bag tortilla chips
2 cup shredded cheddar cheese
2 cup lettuce, chopped
2 celery stalks, diced
1 bell pepper, diced
1 small red onion, diced
1 cup salsa
1 cup guacamole
1 lime, cut into 6 wedges
Preheat oven to Broil high.
On a lined baking sheet add ½ tortilla chips, ½ cheese, additional tortilla chips, and rest of cheese.
Top with mussels and bake for 1-2 minutes, until cheese has melted.
Remove from oven and top with veggies.
Serve with guacamole, salsa, lime wedges. Enjoy!
