PEI Loaded Mussel Nachos

Recipe courtesy of Registered Dietitian Crystal MacGregor



Preheat oven to Broil high.

On a lined baking sheet add ½ tortilla chips, ½ cheese, additional tortilla chips, and rest of cheese.

Top with mussels and bake for 1-2 minutes, until cheese has melted.

Remove from oven and top with veggies.

Serve with guacamole, salsa, lime wedges. Enjoy!
