P.E.I Five Star Oysters, shucked (retain bottom shells)
tsp Shallot (minced)
tbsp Fresh Basil (chopped)
tbsp Fresh Parsley (chopped)
tbsp Tomato (concasse)
Salt and pepper to taste
Heat a medium non-stick skillet and add butter.
Quickly dust oysters in flour and place in the pan. Add shallots and herbs.
Saute until a golden brown. Season and add tomatoes, toss twice and serve in the reserved half shells. Enjoy!
