1.5 cup All Purpose Flour
0.5 cup Cocoa Powder
1 tsp Baking Soda
1 tsp Baking Powder
0.25 tsp Salt
0.5 cup Butter, melted
1 cup Whole Milk
1 tbsp Vanilla Extract
2 Eggs, room temperature
1 cup Sugar
1 cup PEI Russet Potatoes, mashed
2 cup Chocolate Chips
Chocolate Sprinkles
Preheat oven to 350°F.
In a large bowl, mix together flour, cocoa, baking soda and powder and salt.
In a medium bowl, add melted butter, milk and vanilla and stir to combine. Add eggs, sugar and mashed potatoes and mix well.
Fold wet ingredients into dry until combined. Add to greased silicone donut pans.
Bake for 15-20 minutes or until firm to the touch.
Let cool completely.
Meanwhile, melt chocolate chips. Dip the top of each donut into chocolate and decorate with sprinkles.
