Onions
Onions (Allium cepa), also known as the bulb onion, common onion and garden onion, are normally available in yellow, red, and white varieties on PEI. Onions are a cool season crop – ideal for PEI.
History
Onion consumption in Atlantic Canada is traditionally high and is often grown by farmers producing other vegetables.
Preparation/Consumption
Onions are often chopped and used as an ingredient in various hearty warm dishes, and may also used as a main ingredient. They are also used raw in cold salads. Onions pickled in vinegar are eaten as a snack. Fresh onion has a pungent, persistent, even irritating taste, but when sauteed, onion becomes sweet and much less pungent. PEI Onions contain Vitamin C, potassium and calcium plus trace amounts of other nutrients.
