4 PEI Russet Potatoes, peeled, grated
1 large Egg
0.5 tsp Salt
Canola oil
Flaky Salt
Add grated potatoes to a clean, dry dish towel. Squeeze out any excess moisture and discard.
Add potatoes back to clean bowl and mix with egg and salt.
Add oil to coat the bottom of a skillet. Heat over medium until oil is hot and add potatoes. Reduce to medium low and cook for 12-15 minutes without touching.
Top with a large board, and flip upside down. Transfer back to skillet to cook the other side for another 10 minutes.
Let cool slightly, top with flaky salt and slice.
