2 medium Baked PEI Russet Potatoes
4 tbsp Tomato Sauce
2 cup Mozzarella Cheese
0.5 cup Sliced Pepperoni
Salt and Pepper
Oregano
Slide the pre-baked Potatoes in half lengthwise, scoop a small well into the center of the potato, and season lightly with salt and pepper.
Ladle a spoonful of tomato sauce onto each halved potato, sprinkle with oregano, 1/4 cup, of mozzarella on each potato, and add slices of pepperoni.
Bake in oven preheated to 400ºF for 15 minutes, or until cheese is melted and potatoes are warm.
Cool slightly before serving.
