12 PEI quahaugs, rinsed and scrubbed
1 cup tartar sauce, see recipe below
1 cup mayonnaise
3 tbsp relish
2 tbsp chopped parsley
0.5 tbsp lemon zest
1 tbsp fresh lemon juice
1 tbsp prepared yellow mustard
0.5 tsp dried dill
pinch salt
pinch pepper
Preheat grill to high heat.
In a medium bowl combine mayo, relish, parsley, lemon zest, mustard, dill, salt and pepper and mix thoroughly, season with salt and pepper. Refrigerate until ready to use.
Once grill is hot, add quahaugs and cook for 4 – 5 minutes. As the quahaugs cook, they will slowly begin to open and once they are fully open, remove from the grill, transfer to a serving platter. Discard any unopened shells.
Serve with tartar sauce or your favourite shellfish condiments.
