0.25 cup salted butter
0.50 cup firmly packed brown sugar
.125 tsp salt
PEI red skin apples, cut into ½-inch slices (peeled if desired)
1.5 cup of your favourite granola
Heat a large cast iron skillet or heavy frying pan over medium heat. Add butter, brown sugar, cinnamon and salt, heat just until butter is melted, stirring often. Add apples and cover pan with a lid, cook stirring occasionally for 15 – 20 minutes, or until apples are tender. The sauce should be simmering, if it is boiling too hard, reduce heat. Turn off heat, carefully remove lid and set aside. Top cooked apples with an even layer of granola.
Optional: broil apple crisp for 1 – 2 minutes, if desired.
Portion crisp into bowls and enjoy warm. Top with vanilla ice cream, if desired.
Depending on the apple variety you choose; the brown sugar sauce may vary in consistency. If it is too runny, remove the lid during the last 5 minutes of cooking to allow the moisture to evaporate and the sauce to thicken.
