Every artist has a preferred medium, whether it’s clay, oil paints, watercolours, charcoal, stone, or another outlet. Some, however, venture well beyond the typical media. That’s the case for Jane Woodley and Sue Humby, who love creating works of art from chocolate. Yes, that rich, smooth, decadent ingredient that 9 out of 10 people love to indulge in. Chocolate, as they see it, provides the perfect canvas for their love of colour and abstract designs. But their artistry extends beyond the stunning visual exteriors to the indulgent, layered flavour profiles they conjure up for their bonbons, bars, and other delectable treats. Today, you’ll find the creative sister duo working out of their charming chocolate studio in Stanley Bridge, Prince Edward Island. Their adventures in chocolatiering began, however, with a simple booth at the Summerside Farmers’ Market. It was 2018, and the sisters, originally from Ontario, had settled into their new Island home. They decided the time was right to fulfil their lifelong dream of running a food business together by opening a bakery. Shortly after launching, however, Jane developed a gluten intolerance. Not to be deterred, the ambitious duo decided to focus more fully on the chocolates they’d been making alongside their baked goods. The enthusiastic demand for their gorgeous and luxurious creations at the market was all the motivation they needed to go all in on their chocolate-making endeavours.Jane & Sue Chocolate was born. Word quickly spread across PEI – as it is wont to do when Islanders discover a new local treasure – and Jane and Sue found themselves working tirelessly to keep up with demand. At the same time, they were honing their chocolate-making skills through various courses and plenty of hands-on experimentation. Their natural creativity began to shine through as they mastered the exacting standards required to craft exquisite chocolate. Indeed, the inner artist in each of them had been awakened. Soon enough, they found they had outgrown their market booth. A cute white farmhouse in Stanley Bridge beckoned with the promise of a dedicated space for chocolate-making and a retail space all of their own. Located on the stunning North Shore, mere minutes from Cavendish, their new shop and studio quickly became a ‘must-visit’ for chocolate-loving tourists and locals alike during the summer months. As the tourist crowd thinned out, Jane and Sue found themselves gearing up for the biggest chocolate holidays of the year – Christmas, Valentine’s Day, Easter and Mother’s Day. These special occasions opened up a world of creative possibilities for the duo, whose 24-piece advent calendars, Christmas tree ornaments, heart-shaped bonbons, and Easter eggs quickly became coveted gifts sought by chocolate lovers near and far. Fast forward to 2025, and the sisters have settled into a seasonal rhythm along with the staff they’ve hired to help keep everything running smoothly. Never ones to rest on their laurels, however, Jane and Sue’s most recent expansions include an online shop and have also opened a retail shop in Kensington this year. Their online shop, which is open during the cooler months of the year (typically October to May), is an alluring invitation to order works of chocolate art delivered directly to your door or someone you love. It’s proven especially popular for holiday shoppers and for summer visitors seeking to replenish their J&S chocolate stash. As their business continues to grow and evolve, the sisters remain wholly in love with the process of chocolate-making. It perfectly marries their artistic flair with their perfectionist tendencies (a necessary trait for any good chocolatier!).
