Cracked Black Pepper and Chive Sour Cream

lb of fresh PEI Mussels
Clean, lightly scrubbed and de bearded
1 can Libra Pale Ale
1 small small white onion, diced
2 tbsp butter
1 tbsp kosher salt
1 cup heavy cream
0.50 cup full fat sour cream
0.25 cup of thinly chopped chives
1 tbsp of cracked black pepper
1 loaf of fresh sourdough or baguette
In a small bowl: -mix the chopped chives in with the sour cream and the cracked black pepper, set aside (if you like it spicy, add 1 tsp chili flakes)
In a large pot, over medium heat, saute the onions and the butter together for 2 minutes, add the salt
Add the mussels, stir and mix to incorporate for 1 minute
Add the Libra, deglaze for 1 minute
Add the cream, cook for 3 minutes or until the mussels open (do not overcook)
Add the cracked pepper and chive sour cream mix just to incorporate and serve immediately with ALL the tasty broth
Serve Family Style in the middle of the table with the loaf of bread
