Carrots (Daucus carota) are a root vegetable, usually orange in colour, though purple, red, white, and yellow varieties exist. It has a crisp texture when fresh. The most commonly eaten part of a carrot is a taproot, although the greens are edible as well.


Carrot production in Prince Edward Island is important due to a large fresh market and processing industry. It is a crop with a high per capita consumption in Atlantic Canada.


PEI carrots are one of our best sources of Vitamin A. One medium raw carrot supplies our daily requirement of this nutrient. It also contains other vitamins and minerals including potassium.
